Paleo Chicken Zoodle Soup

I wanted to post a recipe that you would typically prepare during the winter.  There’s something about Chicken Zoodle Soup that makes everything right in the world.

I know that while we all try to start the New Year with a fresh outlook, sometimes the inevitable happens and you get sick.  Not only will this Paleo Chicken Zoodle Soup satisfy your stuffy nose and sore throat, but it’s even delicious if you’re not sick.

Here’s to a HEALTHY  2015!

Paleo Chicken Zoodle Soup

Ingredients:

4 Quarts Chicken Broth (This can be store-bought or you can make your own.)

2-3 Large Chicken Breasts, cooked and shredded

4 Stalks Celery, Chopped

1 Cup Baby Carrots, sliced

1 Medium Zucchini Noodles “Zoodles”

1 tsp. salt

1/4 tsp. pepper

1/2 tsp. turmeric (to give the soup it’s yellow color)

1/2 tsp. ground thyme

2 tsp. parsley flakes

1/2 tsp. garlic powder (optional)

Directions:

1) In a large stockpot, bring the chicken broth to a boil.  Add the chicken and boil until cooked through.  Shred chicken.

2) Chop vegetables.  “Zoodle” the zucchini.

3)  Add carrots and celery to the broth and shredded chicken.

4) Add in all seasonings.

4) Bring soup to a boil and then let simmer for 30 minutes.

5)  Add zoodles near the end and allow 5 minutes for cooking time.

6) Enjoy!
