Finally a Vegetable You Will Like (Video)

Remember when your Mom used to make you eat all of your vegetables off of your plate at dinner? Yeah, that was pretty annoying and I will try not to bring back bad memories for you!

I do think it is safe to say that we all need to eat more vegetables. There are so many different diet and lifestyle prescriptions out there and many of them have huge contradictions. However, the one thing that all of them share in common is to eat more vegetables!

There are endless options to prepare vegetables. You may eat them raw, you may juice them, or you may choose to cook them. But for whatever reason most people don’t freaking know how to make vegetables or think outside of the box (myself included)!

Today I decided to share a completely random, quick, and easy way to think outside the box and create a vegetable dish that actually tastes really good too! It is called Coconut Almond Kale and it goes great with fish or chicken.

As I have mentioned before, one of the keys to success on the Paleo Diet is bringing in enough fat on a daily basis. This meal adds several good sources of fat with the coconut oil, shredded coconut, and slivered almonds. These added sources of fat make this meal a great choice to eat with leaner cuts of fish and chicken.
